Binda (okra) with Potatoes and Chicken

Prep time: 25 minutes, Cook time: 20 minutes,
Yield: 4 servings

Ingredients

  • 300g okra, chopped (can get frozen bag from Tesco)
  • 2 small chicken breasts (or 1 large, roughly 300g), cubed
  • 2 medium sized potatoes, cubed
  • 1 medium onion, diced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp chilli powder, or to taste
  • ½ tsp ground turmeric
  • 1 heaped tsp ginger garlic paste
  • 1 tbsp blended tomatoes
  • Salt to taste

Instructions

  1. Fry the potatoes in a little oil and leave aside. Then fry the chopped okra and leave aside. Be sure not to overfry the okra
  2. Braise onions and when soft, add the ginger garlic paste. Once it starts browning, add the coriander, cumin and tomatoes.
  3. Add the chicken and cook.
  4. Once the chicken is cooked, add the potatoes and okra. Serve with warm roti.
