Ingredients
- 300g okra, chopped (can get frozen bag from Tesco)
- 2 small chicken breasts (or 1 large, roughly 300g), cubed
- 2 medium sized potatoes, cubed
- 1 medium onion, diced
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp chilli powder, or to taste
- ½ tsp ground turmeric
- 1 heaped tsp ginger garlic paste
- 1 tbsp blended tomatoes
- Salt to taste
Instructions
- Fry the potatoes in a little oil and leave aside. Then fry the chopped okra and leave aside. Be sure not to overfry the okra
- Braise onions and when soft, add the ginger garlic paste. Once it starts browning, add the coriander, cumin and tomatoes.
- Add the chicken and cook.
- Once the chicken is cooked, add the potatoes and okra. Serve with warm roti.
