Spicy Roasted Cashew Nuts

Yield: 6 servings

Ingredients

  • 500g cashew nuts
  • 1 tbsp oil
  • 1 tbsp lemon juice
  • 1 tsp ground paprika
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp chilli powder, or to taste
  • 1 tsp salt

Instructions

  1. Set oven to 150°C (130°C Fan, Gas Mark 2).
  2. Mix the oil, lemon juice, salt and spices together. Mix in the cashews making sure that all of them are properly coated in the spice mixture.
  3. Transfer onto roasting dish and place in the oven.
  4. Roast the cashews for an hour, turning them round half way through.
