Ingredients
- Rice
- 400g (1 tin) tomatoes, blended
- Salt and pepper
- Chilli powder
- Coriander powder
- Cumin powder
- Pinch turmeric powder
- Oil
- 1 potato, cubed
- 500g chicken breast, cubed
- Crushed green chillies
- Mayonnaise
Instructions
- Boil rice with a little bit of salt. Set aside but keep warm.
- Make a tomato gravy using the tinned tomatoes, salt, chilli powder, coriander powder, cumin powder, turmeric powder and a little bit of oil. Set aside.
- Fry the cubed potatoes. Set aside.
- Cook the chicken with a little bit of oil, salt and pepper and green chillies until there is no water left. Once cooked at mayonnaise to the cooked chicken.
- Layer up all the components in an oven-proof dish, starting with the rice, then the chicken, then the tomato gravy, and finally the fried potatoes. Bake in the oven for 30 minutes.
Tips
- You can also add peppers (cut lengthways) and sweetcorn to this dish. This can be cooked alongside the chicken.
