Chinese Rice

Yield: 5-6 servings

Ingredients

  • Rice
  • 400g (1 tin) tomatoes, blended
  • Salt and pepper
  • Chilli powder
  • Coriander powder
  • Cumin powder
  • Pinch turmeric powder
  • Oil
  • 1 potato, cubed
  • 500g chicken breast, cubed
  • Crushed green chillies
  • Mayonnaise

Instructions

  1. Boil rice with a little bit of salt. Set aside but keep warm.
  2. Make a tomato gravy using the tinned tomatoes, salt, chilli powder, coriander powder, cumin powder, turmeric powder and a little bit of oil. Set aside.
  3. Fry the cubed potatoes. Set aside.
  4. Cook the chicken with a little bit of oil, salt and pepper and green chillies until there is no water left. Once cooked at mayonnaise to the cooked chicken.
  5. Layer up all the components in an oven-proof dish, starting with the rice, then the chicken, then the tomato gravy, and finally the fried potatoes. Bake in the oven for 30 minutes.

Tips

  • You can also add peppers (cut lengthways) and sweetcorn to this dish. This can be cooked alongside the chicken.
