Chilli and Garlic Prawns

Ingredients

  • 1 tbsp butter or olive oil
  • 1 tbsp garlic, crushed
  • ½ tsp dried chilli flakes, or ½ red finger chilli chopped finely
  • 2 tbsp tomato puree
  • 1 tsp paprika
  • 2 tbsp lemon juice, or more to taste
  • Approx. 150g pack of raw jumbo king prawns, peeled
  • (optional) flat-leaf parsley as garnish

Instructions

  1. On medium high heat, melt butter and cook garlic with chilli or chilli powder.
  2. When garlic starts to brown, add the tomato puree and cook for another two to three minutes.
  3. Add lemon juice and try to cook out as much of the liquid as possible.
  4. Tip in the prawns and cook until pink. The water from the prawns will turn the rest of the ingredients into more of a soup.
  5. Add salt and more lemon juice to taste. Cook out the soup until it reaches the desired level of thickness. Garnish with chopped parsley.

Tips

  • Dough balls go well with this dish, to soak up the soup.
  • The ingredient volumes here are rough estimates. Feel free to adapt.
