Ingredients
- 4 eggs separated
- ¾ cup caster sugar
- ½ cup oil
- ½ cup water
- 1 cup flour
- 2 tablespoons cornflour
- 2 ½ teaspoons baking powder
- 1 teaspoon vanilla
- jam, fresh cream, and toasted coconut to decorate
Instructions
- Beat egg whites till stiff
- In another bowl, beat egg yolks and sugar till light and fluffy
- Add oil gradually
- Add water gradually
- Beat in flour, cornflour and vanilla
- Fold in egg whites and baking powder
- Pour in greased cup cake pans and bake at 180C
- When cool, roll sides into heated jam and toasted coconut. Pipe cream on top to decorate
