Fancies

Ingredients

  • 4 eggs separated
  • ¾ cup caster sugar
  • ½ cup oil
  • ½ cup water
  • 1 cup flour
  • 2 tablespoons cornflour
  • 2 ½ teaspoons baking powder
  • 1 teaspoon vanilla
  • jam, fresh cream, and toasted coconut to decorate

Instructions

  1. Beat egg whites till stiff
  2. In another bowl, beat egg yolks and sugar till light and fluffy
  3. Add oil gradually
  4. Add water gradually
  5. Beat in flour, cornflour and vanilla
  6. Fold in egg whites and baking powder
  7. Pour in greased cup cake pans and bake at 180C
  8. When cool, roll sides into heated jam and toasted coconut. Pipe cream on top to decorate
