Caramelised Onion Bruschetta

Ingredients

  • 115g butter or margarine
  • 3 large red onions, cut in half and thinly sliced
  • 50g sugar
  • 3 tablespoons raspberry or balsamic vinegar
  • 1 baguette bread cut into 2-3 cm slices
  • 225g cream cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a heavy skillet, melt butter over medium-high heat until sizzling. Cook onions in butter for 5 to 6 minutes, stirring frequently until the onions have softened. Stir in the sugar and vinegar. Cook for 9 to 10 minutes, stirring frequently, until the onions are very soft and light golden brown. Cool the onion mixture slightly for about 10 minutes.
  2. Set the oven control to broil. Place the bread slices on a cookie sheet. Place the bread around 4 inches from the heat and broil for 1 to 2 minutes or until lightly browned. Turn the bread; grill for 1 to 2 minutes longer or until lightly browned.
  3. Spread about 2 teaspoons of cream cheese on each bread slice. Top each with 1 tablespoon of the onion mixture; sprinkle with a small amount parsley.
