Ingredients
- 115g butter or margarine
- 3 large red onions, cut in half and thinly sliced
- 50g sugar
- 3 tablespoons raspberry or balsamic vinegar
- 1 baguette bread cut into 2-3 cm slices
- 225g cream cheese
- 2 tablespoons chopped fresh parsley
Instructions
- In a heavy skillet, melt butter over medium-high heat until sizzling. Cook onions in butter for 5 to 6 minutes, stirring frequently until the onions have softened. Stir in the sugar and vinegar. Cook for 9 to 10 minutes, stirring frequently, until the onions are very soft and light golden brown. Cool the onion mixture slightly for about 10 minutes.
- Set the oven control to broil. Place the bread slices on a cookie sheet. Place the bread around 4 inches from the heat and broil for 1 to 2 minutes or until lightly browned. Turn the bread; grill for 1 to 2 minutes longer or until lightly browned.
- Spread about 2 teaspoons of cream cheese on each bread slice. Top each with 1 tablespoon of the onion mixture; sprinkle with a small amount parsley.
