Cheesecake

Ingredients

For the base

  • Springform tin, lined
  • ½ packet Marie biscuits (I use more)
  • 125g margarine

For the filling

  • 300ml fresh cream
  • 1 tin condensed milk
  • ½ cup hot water
  • 10g / 2tsp gelatine
  • 1 tub cream cheese
  • Chocolate, melted

Instructions

  1. To make the base, melt margarine and mix with biscuits. Press firm into tin and put in freezer until hard.
  2. Whip fresh cream until almost done as for piping.
  3. Add condensed milk, keep beating.
  4. Take ½ cup hot water and add gelatine, mixing well.
  5. Add gelatine to cream and beat.
  6. Add cream cheese a little at a time, so it doesn’t split.
  7. Once combined, pour half the mixture onto the base.
  8. Melt chocolate and add to the second half of the mixture. Pour onto the top (it should sink).
  9. Take fork and swirl for marble effect.
  10. Set overnight.
